General Characteristics of Cabernet Sauvignon
Cabernet Sauvignon is the most popular wine in America and is loved by wine enthusiasts around the world. The variations of Cabernet Sauvignon that we grow on property are FPS 04 and 337 grape clones, which are combined to create this delectable wine. These clones enjoy the Malibu Coast weather as it is accompanied by the Malibu sun and Santa Monica Mountains shadow and nutrient rich soils. This full-bodied red wine has a medium acidity, perfect for pairing with various meat, poultry and hearty dishes. This wine, like most California cabernets, is dry (not sweet) and contains supple tannins. It is described by many wine drinkers as full-bodied, with flavors of tobacco, cassis, and dark fruit, like cherries. People also sometimes experience a hint of vanilla coming from aging in new and neutral French Oak barrels.

2019 Malibu Coast Cabernet Sauvignon, Reserve
Winemaker Notes:
Our 2019 Cabernet Sauvignon is absolutely delightful. This bright and rich Cabernet Sauvignon is flavorful packed with red and black berries, cherries and a hint of licorice. Notes of salinity, damp earth and terracotta pair beautifuly with the succulent fruit and violet flavors. There’s a lovely tannin that coats your palate and an underipe tartness that prepares your mouth for your next bite of food and or sip. Our recommended pairing is a delicious sicilian style pepperoni pizza, a marvelous cheddar cheese and/or gruyer or a beautiful mushroom risotto. This wine is tasty now but also has room to age.
Proprietor Recommendations:
There are two main reasons to decant a bottle of wine
1) Expose it to oxygen and open the wine up, particularly this is helpful with very young wines or wines aged 10-15 years.
2) Remove the wine off of the sediment which is particular to older bottles
We recommend when you open this wine to decant it for 45 minutes prior to consumption.

This tasty medium bodied wine introduces itself with ripe cherry and red plum backed by damp earth and tobacco. The finish is refined and distinguished making this wine a perfect pair for a hearty meal such as a steak or pasta with red sauce. As with most Cabernet Sauvignon, time is a friend. This wine drinks beautifully today but will mature and improve well past the end of the decade.
Thanks to the rain shadow effect and the volcanic and mineral composition of the soil, the Malibu Coast AVA has the perfect conditions for grapes to grow. This AVA is home to several microclimates. The microclimates allow for both warm climate and cool climate wines.
